Quick answer: Add class_name and extends Resource to the script, save it, and let Godot rescan so the type shows in the Create Resource dialog and export hints.
You wrote a custom Resource for your item data but it never shows up when you click New Resource, and you cannot type-hint an export to it. The class needs a registered name so the editor knows it exists.
How to fix it
1. Register a class_name
Add class_name ItemData and extends Resource at the top of the script; Godot then lists ItemData in the Create New Resource dialog.
2. Type-hint exports to it
Once registered you can write @export var item: ItemData and the inspector will only accept resources of that type, preventing wrong-type assignment.
3. Force a rescan if it lags
If it still does not appear, use Project > Reload Current Project or restart the editor so the class registry picks up the new global type.
